This copycat recipe is spot on! And it has the yummiest cornflake crusted, juicy, crispy chicken on top! In this recipe, the chicken is coated in cornflakes and then fried.
I am not really into chain restaurants other than like Cafe Rio, or the rolls at Texas Roadhouse. I just feel like as soon as the restaurant branches out it turns into reheated entrees and wilty lettuce. I need to make a copycat for those too.

This is our go to chicken salad recipe. We grill chicken because it is less work, and instead of chow mein noodles, we use purchased won ton strips. Have to add a sprinkling of cilantro too.
I know. And I could add more of what I wanted healthy veggies and less of what makes it so full of calories and fat — their dressing, the fried noodles, and almonds. Using the same amount of chicken tenders that I purchase from the deli counter calories, 10g fat and my Low-Fat Honey Mustard Dressing 61 calories, 4g fat well … you do the math.
